Lemon Blueberry Loaf (with Splenda)

Yields 2 loaves / 24 portions

Pre-heat oven to 350 degrees

Step #1:

400 g all purpose flour
30 g baking powder
40 g Splenda granular
10 g salt

Step #2:

4 whole eggs
160 g milk
100 g olive oil
2 lemons (zest and juice)

Preparation:

  • Mix the ingredients in Step #1 in a large bowl
  • Mix the ingredients in Step #2 in another bowl
  • Mix the liquid in Step #2 with the ingredients in Step #1
  • Fold in the blueberries once all ingredients are mixed well
  • Bake in a 2 separate loaf pans for 20 minutes at 350 degrees
