This is a diatetic recipe designed for diabetics

Serves 4
3 medium ripe peaches
½ cup frozen cherries
Juice of 1 lime or lemon
1 tablespoon sugar substitute
¼ teaspoon ground nutmeg
Crumble Topping
2 tablespoons unbleached all-purpose flour
2 tablespoons stone-ground cornmeal
2 tablespoons rolled quick oats
1 tablespoon light brown sugar
Grated zest of 1 lime or lemon
1 tablespoon cold low fat margarine, cut into bits
- Preheat oven to 375°F
- Peel peaches, removing the seed and cut into slices.
- Add lime or lemon juice, sugar substitute, and nutmeg.
- Toss lightly to combine. Pour the cherries and spread evenly over peaches.
- Transfer mixture to a shallow baking dish.
- In a small bowl, combine flour, cornmeal, oats, brown sugar, and lemon or lime zest.
- Sprinkle mixture over the peach/cherry mixture and dot with margarine.
- Bake until topping is nicely browned and fruit juices have begun to bubble, about 25 to 30 minutes.
- Remove from oven and cool for at least 10 minutes before serving.
